紫蘇拌薯仔片

材料

薯仔一個,紫蘇葉適量,芹菜三根,小蔥一根,香菜一根,蒜三瓣。

調味汁:鹽適量,生抽一匙,香醋一匙,糖少許\,香油適量,辣椒油適量,熟黑芝麻適量。
做法

1.薯仔去皮切薄片,放入清水中浸泡十分鐘,衝淨瀝干水;

2.紫蘇葉洗淨,芹菜、香菜切段,小蔥切碎,蒜切末;

3.將調味料用一個小碗拌勻備用;

4.燒水,水沸後放薯仔片焯燙約60秒,撈出,過冷水,裝入盆中;

5.放入紫蘇葉、芹菜、香菜、小蔥、蒜,澆入調好的味汁,拌勻即可。
小訣竅

1.薯仔片經過浸泡去掉一些澱粉,這樣焯燙後薯仔片是脆的;

2.焯燙薯仔片的時間要根據切的薄厚做調整,如果不確定可以嘗一下,沒有薯仔的生味即可;

3.涼拌薯仔片,即使不放紫蘇、芹菜、香菜這些配菜也很好吃,我不過是想一次多吃點蔬菜,配菜豐儉由人。
