白蓮蓉餡

材料

鮮蓮子500克,細砂糖300克,花生油135克。
做法

1.鮮蓮子洗淨後去芯(我買的是去過芯的,如果是用干蓮子要先用清水浸泡至軟去芯再煮)。

2.加入沒過蓮子的清水,煮至蓮子軟爛。

3.煮好的蓮子冷卻,倒入料理機的攪拌杯裡,攪打成泥狀。

4.炒鍋燒熱,加入一大勺花生油和2大勺細砂糖,炒化。

5.倒入蓮子泥,不斷翻炒,使蓮子泥與糖、油混合至吸收。倒入剩下的全部細砂糖,用中火加熱並不斷翻炒至蓮子泥沸騰,轉中小火。

6.持續用中小火翻炒,炒的過程中分多次加入花生油。每一次都翻炒至蓮子泥將花生油完全吸收後再加下一次。

7.翻炒過程中,隨著水分不斷揮發,蓮子泥會逐漸稠厚。

8.翻炒至如圖所示的比較干而且比較硬的狀態,就可以關火了。餡冷卻後即可使用(如果暫時不用,可以放冰箱冷凍)。
小訣竅

1.蓮子泥剛開始水分比較多,可能會冒泡往外濺,要注意不要燙到手和身體,隨著水分不斷蒸發慢慢就好了。

2.炒的過程中要不停用翻拌鏟攪拌,以免糊底;

3.鮮蓮子外面有一層很薄的皮,我沒有一個個剝皮,所以炒好的餡會有星星點點的黑色,不礙事。

Tips
