紅油萵筍雞

材料

主料:鮮雞腿半只,萵筍半條,花生米適量。

煮雞調料:蔥一段,姜一塊,八角一個,桂皮一小塊,料酒一匙。

調味汁:雞湯兩大匙(煮雞的湯),鹽適量、生抽兩匙、香醋兩匙、白糖少許\、蔥花(一根)、香油少許\、辣椒油適量、熟黑芝麻適量。
做法

1.雞腿洗淨,切塊,冷水下鍋,鍋中放入蔥、姜(拍一下)、八角、桂皮,大火燒沸,點入少許\料酒,中火煮20分鐘即可關火;

2.將雞腿撈出晾涼;

3.萵筍洗淨,切滾刀塊,用煮雞的湯汆燙30秒撈出,過一下冷水備用;

4.炒鍋注少許\油,小火將花生炒熟;

5.調味汁:將澆汁裡的所有調料按口味調勻備用;

6.將晾好的雞裝入盆中,再放入萵筍和炒好的花生,倒入調味汁,拌勻即可。(拌好後最好過半小時或一小時吃,那樣會更入味兒)
小訣竅

1.如果是整只雞或半只雞煮,要延長煮的時間,大約30分鐘即可。煮熟晾涼後再切塊,不要切得太碎;

2.萵筍也可以不汆燙,直接用少許\鹽拌勻腌制20分鐘再用;

3.紅油可以根據適辣的程度做增減。
