韓式炸雞

材料

主料:雞胸肉

腌肉料:蒜兩瓣(剁碎),糖少許\,胡椒粉適量,料酒兩匙,鹽少許\,生抽兩匙。

面糊:玉米澱粉兩匙,普通面粉1匙。

包裹醬汁:韓式辣醬,番茄醬,沙拉醬,蠔油,糖,水,各兩匙。

表面裝飾:炒熟白芝麻。
做法

1.雞胸肉切適當大小的塊,放腌肉料拌勻,腌制最少半小時;

2.將包裹醬汁混合均勻,放入鍋中,小火煮至冒泡兒,關火,晾涼;

3.腌制好的雞肉裡放玉米澱粉和普通面粉,拌勻,使每塊雞肉都沾上面粉;

4.取油鍋,放寬油,燒至鍋底開始冒小泡,將雞塊逐一放入,炸至定型撈出;

5.將鍋中的油再次燒熱,倒入炸過一次的雞塊,快速復炸至表皮金黃色,撈出,瀝油;

6.將炸好的雞塊放入事先熬好的醬汁中拌勻,最後均勻撒熟白芝麻。
小訣竅

1.腌肉料裡只放一點點鹽就好,包裹醬料有鹹味;

2.包裹醬料配制並沒有嚴格比例,按照自己和家人喜歡的味道來調就好,基調是酸甜辣;

3.雞塊用油高溫復炸一次才會外脆內軟。
