糖醋香菇素鱔魚

材料

干香菇,鹽,五香粉,白胡椒粉,玉米澱粉,雞粉,白糖,醬油,陳醋,大蔥,生姜
做法

1、干香菇用清水泡發後稍擠下水

2、用剪刀沿著香菇邊把香菇剪成長條狀,不要太細,不然油炸後就太小了。

3、剪好的香菇條加入鹽,白胡椒粉,五香粉,雞粉抓勻稍腌幾分鐘

4、腌好的香菇條加入玉米澱粉(也可用其它澱粉,只是玉米澱粉炸過後脆些)

5、讓每條香菇都均勻裹上玉米澱粉

6、起油鍋,油熱下香菇條,炸至微黃

7、第一次炸好撈出,等油溫升高還要復炸

8、第二次復炸至金黃,硬挺撈出備用

9、炒鍋放油,4成熱下姜蔥末炒出香味

10、倒入醬油、陳醋、白糖調成的醬汁

11、用生粉汁勾芡

12、倒入炸好的午菇條炒勻即可
