蔥油燒帶魚

材料

帶魚一條(冰鮮最好),大蔥2根,雞蛋一個,生姜,大蒜,花椒粒,八角,桂皮,蠔油,醬油,鹽,生粉,雞粉,白砂糖,料酒
做法

1、帶魚洗淨切段,加入少許\鹽,適量生姜片,蒜片,花椒粒,料酒,蔥段抓勻腌制十分鐘左右。

2、雞蛋一只打散,鍋裡放油燒至5成熱,帶魚裹上蛋液

3、帶魚入油鍋炸,也可用煎的方式,炸至金黃色

4、炸好的帶魚撈出備用

5、備好香料,大蔥切段

6、另起油鍋放適量油,下大蔥段,八角,桂皮中小火慢煎出香味

7、煎至大蔥段表面金黃,撈出完整的蔥段

8、油鍋裡放入花椒粒炒香,加入適量蠔油、醬油、少許\砂糖,半碗清水

9、把炸好的帶魚倒入鍋裡,輕輕翻勻後稍燜幾分鐘

10、至湯汁收稠,最後用少許\生粉勾芡,下雞粉調味起鍋
